First Night of the "Healthy Dinner Makeover":
I get home really late from work and need to make dinners that are quick, easy and healthy! Here is my first dinner for the 10-day dinner make-over:
Quick Spanish Rice!
I sautéed a a medium diced yellow onion, diced red and green peppers, chopped tomato in olive oil. Once slightly cooked, I browned grass-fed ground beef in the same pan, added 1 can of Hunt's green chili and lime tomatoes, juice of 1 lime, 2 TBS dark chile powder, salt and pepper and mixed altogether with per-cooked rice. I used pre-cooked frozen rice and heated it up in water before adding to dish. That's it!

Optional: top with avocado or sour cream and roll-up in brown rice tortilla. Tastes great mixed with scrambled eggs in the morning.
