Day 4 of the "Paleo Diet Makeover"!
Shakshuka: a classic Israeli favorite, but Paleo friendly and the sauce can be made in advance to make this dish even more of time saver!
1 1/2 tsp olive oil
1 medium onion, chopped
1 red bell pepper, diced
1 jalapeno chile, chopped (I don't use a chile and it is still yummy)
8 Roma tomatoes, diced
1/2 tsp cumin powder
1 TBS tomato paste
4 large eggs
3 TBS chopped parsley (optional)
Heat olive oil in a pan, ad onions and bell pepper, saute for about 5-8 minutes. Add garlic and jalapeno, saute 1 minute. Add tomatoes, cumin, season with salt and pepper, to taste. Cover and cook for 2 minutes. Uncover and cook 6-8 minutes. Stir in tomato paste, cook for 1 minute.
Reduce heat. Make 4 cavities in the mixture with a spoon. Break 1 egg into a small dish, slip into a cavity. Repeat until all cavities are full. Cover and cook 8-10 minutes, until egg whites are set. Sprinkle with parsley.
This dish is great for any meal of the day. It is full of proteins, vitamin C and vitamin D!
